Fact that your coolant temp on highway was fine suggests your thermostat is functioning properly. That being the case you might want to avoid unbolting the thermostat housing. When I unbolted my thermostat housing about 8 years ago bolts were corroded and led to stripping the threads on the thermostat housing. Unless you are willing to take the risk and prepared to have it helicoiled, if the threads get stripped, I would leave the thermostat in place. Just my thoughts.
