Default Will 355's fit?

I'm running C6 GS wheels with 325's, I found some 5th gen Viper take offs that I might get cheap (front and rear). Anyone running a 355 19 out back?

Depends how they actually measure.
I'm running 345/30-ZR19 Michelin Pilot Super Sports and they are about as big a tire you will get under the rear of a ZR-1 without gutting the wheel wells.

Maybe you can find the specs of the tires*, and look at their tread width and section width (as mounted on a specific size wheel). Once you know that, you can compare it to what you have on the car now, and see if you have clearance for the new size.

* Different manufacturers have different actual sizes.

Both are 315's rears on ZR-1 oem rims.
Left is Vredestein Sessanta on A-mold.
Right is BF Goodrich on '90 Saladshooter.

The info I got for the 355 was for a 12.5 wheel. I didn't see that until now.
