I'm gonna have to remove the cam covers to get them powder coated. I've heard stories of the cam cover bolts breaking off. How often does this happen. I take it that its best to do it when the engine is hot. Any tips?

You'll be fine. If one seems to be seriously stick a little PB Blaster or Mystery Oil does the trick. You're likely going to replace the bolts anyway with SS ones. No great shakes here.

If I feel one being a little grumpy I'll work it back & forth a little (counter clockwise-clockwise) to help break it free. I've never had one snap on me yet, thankfully

I have a dozen I am selling here at one-half price. I bought mine many years ago just in case I did break a few off in removal. They do break, occassionally.
