These temps would depend on what if anything has been done to the chip to alter fan temps on and off, what rear gear ratio, what gear you were in and how fast were you going.
My car with stock ratio (3:45) in 6th gear at around 65 will be just around that temp (200d or so). Shift to 5th at the same speed and the temp drops to 192d. I've never checked with AC on so can't tell you about that.

Three questions:

I don't think you do. If you put in a different T-Stat, I understand you will have to recalibrate the chip.
