Since we're talking about the ZF6 and not the LT5, there's lots of competent shops in the area that would be capable of doing the transmission work on your car.
If it were me, I'd find a local shop that specializes on hot rods and restorations.
I would highly advise against even thinking of taking it to a Chevy Dealership or a flat rate shop of any kind.
If money were no object, I'd ship the car down to Bill B (the ZF Doc) at ZR51 Performance in Cave Creek Arizona.

Thanks for the advice. I don't have a facility where I could do it myself so I have to use a shop. I'm talking to Precision Motive in Hayward at this point. I've no intention of going near a Chevy dealer. Your suggestion of Bill B is really good. I'll check out the cost of shipping - might even drive it there
