I have a open trailer that I've used to occasionally cart my '70 drop-top and '78 Trans Am around (haven't needed to cart the Z anywhere yet).
As mentioned above I use the trailer's tongue jack to raise it a bit reducing the climb up angle of the ramps (the dove tail drop of the trailer helps also). I also put a floor jack under the rear edge of the trailer so it stays stationary while loading or unloading. The trailer fenders can be easily removed so door clearance isn't an issue.
I used to secure the car by the tires/wheels but didn't like the feel of it bouncing and bobbing around back there. Securing the car by the frame makes it feel more solid. I criss-cross the front tie-downs but not the rear ones.
