Joe Thomas is 6'4 to 6'6 and weighs a bit more than you so I am guessing you will fit easily enough.
As for the parts that are no longer available. Necessity is the mother of all invention. What is not available today will be available tomorrow.
If I had to give you advice buy a modded car you cant go wrong for the price.
