Here are are few shots of the clearance machine work I had do to for the 0.500" lift intake cams going into this year's "winter project":

Pretty radical lift! Where did you get your cams made? Putting in after market pistons?

What are the best cams to get for a stock lower end or is it best to stick to stock?

That all depends on what you want out of the car. Are u porting th top end?
What kind of power are u looking for?

What valve spring do you use with those cams?

Depends. On the mass of the valvetrain, rpm, and acceleration rates of the lobe. In my case, I used a Porsche spring (outer only). Phil used PSI I think.

And this is where one of the advantageous of the DOHC architecture comes into effect, esp. when comnparing an OHV SBC vs. a DOHC Chev engine. The lighter the valvetrain is, the less valve spring is needed, all else equal.
