What's best way to change fluid in clutch reservoir?

If you are going to the trouble you should drain both the master and slave cylinders. After long period of time the fluid down in the slave becomes nasty swamp-like goo due to moister accumulation which eventually will corrode the slave cylinder inner bore surface. This then wipes out the seal and fluid leaks soon follow. I drain mine by removing the clutch line at the slave cylinder. Then stick the line in a catch can and pump the clutch peddle until the master and line are fully drained. Then flush again with a filling of fresh fluid just to be sure all of the old stuff is out. Then remove the slave from the bell housing and compress the plunger by hand while holding it over the trash can until it is also fully drained. After reinstalling fill the master reservoir with new GM P/N 12345347 "Hydraulic Clutch Fluid" (some use DOT 3 brake fluid) and bleed the system as you normally would.
